Holiday Pork Tenderloin

Hey everyone! This recipe is great for holidays, especially if you have a smaller family. I’d say it serves about 3. This is a great alternative if you don’t want to do the traditional ham or turkey.

Ingredients:

  • 1lb pork tenderloin
  • 1 tbsp sunflower oil
  • 1/4 cup mint leaves
  • 1 cup of coffee beans
  • 1 cup of chestnuts
  • 2 tbsp fresh rosemary

Directions:

  1. Take all ingredients minus the tenderloin and pulse in a food processor until ground.
  2. Place tenderloin in bowl, toss with chestnut blend and cover with mixture. Place plastic wrap over bowl and let marinate for four hours.
  3. Place parchment paper on baking sheet. Place tenderloin on baking sheet.
  4. Place in oven at 350 degrees for 20-30 minutes. Flip halfway. (If not cooked through put back until the center appears like the photo or to your liking).
