Holiday Pork Tenderloin
Hey everyone! This recipe is great for holidays, especially if you have a smaller family. I’d say it serves about 3. This is a great alternative if you don’t want to do the traditional ham or turkey.
- 1lb pork tenderloin
- 1 tbsp sunflower oil
- 1/4 cup mint leaves
- 1 cup of coffee beans
- 1 cup of chestnuts
- 2 tbsp fresh rosemary
- Take all ingredients minus the tenderloin and pulse in a food processor until ground.
- Place tenderloin in bowl, toss with chestnut blend and cover with mixture. Place plastic wrap over bowl and let marinate for four hours.
- Place parchment paper on baking sheet. Place tenderloin on baking sheet.
- Place in oven at 350 degrees for 20-30 minutes. Flip halfway. (If not cooked through put back until the center appears like the photo or to your liking).
