Simple Root Vegetable Salad 



Hey everyone!

Lately , basic leafy salads have not been cutting it for me. It can have lettuce, but I need a little more substance. This recipe is super simple, great for meal prep and pretty tasty.

Let’s get to it.


  • 2 tbsp sunflower oil
  • 2 tsp pepper
  • 3 large carrots
  • 2 baby beets
  • 2 Romaine lettuce leaves
  • 1 tbsp pepitas
  • 1 lemon
  • 1 tsp thyme
  • 1 tsp honey


  1. Preheat oven to 350.
  2. Chop carrots, into small medallions.
  3. Place carrots into a pan, drizzle with 1 tbsp oil and 2 tsp pepper.
  4. Bake carrots 15 minutes.
  5. Slice baby beets.
  6. Chop romaine leaves.
  7. Take small bowl , juice lemon, add thyme 1 tbsp olive oil and 1 tsp honey. Whisk. This makes dressing.
  8. Combine beets, carrots and romaine leaves. Drizzle the dressing over.
  9. Serve and top with pepitas!
