Sweet & Sour Chicken



Hey everyone! The past few days have been a little gloomy, weather related. I’m thought I would add a little color and flavor to brighten the day up. I had a lot of fun creating the recipe. I hope you have fun as well.


  • 2 chicken breast cubed
  • 1 cup almond flour
  • 1/4 cup sunflower oil
  • 2 garlic cloves chopped
  • 1 cup snap peas
  • 1  small bunch bok choy
  • 1 egg


  • 1/4 cup honey
  • 1/4 cup white wine vinegar
  • 1/4 cup aminos
  • 1 tsp garlic powder
  • 1 tsp ground ginger
  • 1 tsp onion powder
  • 1/4 cup tomato paste


  1. In small sauté pan heat 2 tbsp oil at medium heat. Sauté garlic, boj Choy and snap peas. Do this approx 10 minutes, stirring.
  2. In a bowl whisk egg. In another bowl  place almond flour. Take your uncooked cubed chicken and dip each cube into the egg and then into the almond flour.
  3. Remove vegetables from sauté pan. Add remaining oil and heat. Place breaded chicken in pan and cook approximately 10-12 minutes per side. (Or until browned and cooked through).
  4. Combine all sauce ingredients in a small sauce pot. Continuously whisk until brought to a boil.
  5. Once chicken is cooked through. Serve over vegetables and serve sauce on side. The sauce is very rich, use sparingly.
