Turkey Meatballs with a Roasted Green Pepper Sauce

Hey everyone! Ready for the new recipes? Let’s start with meatballs. You don’t always have to have a marinara to eat meatballs. This one I made a fun sauce , that is great for summer and it has a kick. I hope you enjoy!

First let’s start with the sauce

Roasted green pepper sauce:

Ingredients:

  • 4 tbsp sunflower oil
  • 2 leeks chopped (white part only)
  • 4 tbsp almond milk
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 roasted poblano
  • 2 bell peppers roasted
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tsp salt
  • 3 tsp pepper
  • 1 cup spinach leaves, packed

Directions:

  1. To roast the peppers: preheat oven to 400 degrees Fahrenheit.
  2. Line a baking sheet with foil. Bake bell peppers and poblano for 30 minutes .
  3. once peppers are baked remove from oven let cool slightly, and remove seeds and chop pepper.
  4. Min a small pan place 1 tbsp oil and heat.
  5. Add leek to sauté pan. Sauté 3 minutes on medium heat.
  6. Combine all ingredients into food processor and pulse until your preferred consistency.

Meatballs:

Ingredients:

  • 1 lb ground turkey
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 tsp onion powder
  • 2 tbsp tapioca flour
  • 1 shallot diced
  • 2 egg whites
  • 2 tbsp cilantro chopped
  • 1/4 cup sunflower oil

Directions :

  1. Use a large bowl and combine turkey, cilantro, flour and remaining meatball ingredients minus the oil.
  2. Fold ingredients together and once thoroughly combined roll into meatballs.
  3. I made my meatballs about a half inch in diameter, but you can make them to your preference.
  4. Place on an oiled baking sheet (use about 1 tbsp) and bake 20 minutes.
  5. Transfer meatballs to a sauté pan. Heat remaining oil in pan to medium/high heat. Sauté meatballs browning all sides.
  6. Once the meatballs are done add your sauce.
  7. Enjoy!
